A wonderful fruit forward coffee. Roasted just to a medium roast profile adding a touch of brown sugar notes.

Great as a pour over and even French press. You can also have lots of fun dialing it in as a single origin espresso!

Process: This is a dry processed (natural) coffee which are dried in the full cherry prior to de-pulping. Naturals tend to have more fruit and fermented flavors because the bean has more time to interact with the natural sugars from the cherry as enzymes break down the mucilage around the bean.

About the farm: Finca El Cachimbon is in the Lempira area of Western Honduras. Owned by Porfilio Lopez, El Cachimbon has 17 hectares, 15 of which are cultivated. San Andreas is a small municipality within the state of Lempira, with a population of 15,000 people primarily involved in the cultivation of coffee. This farm is currently in their second season of Mercon Speciality Coffee LIFT program.

LIFT: I purchase many coffees from Mercon Speciality and within their organization they have started their LIFT program. Having a strong presence at origins allows them to develop direct relationships with producers and have a better understanding of their needs.

LIFT is a sustainable production program that provides valuable tools, training and services to coffee farmers and coffee communities.

Through LIFT, they work directly with coffee producers to raise their quality of life by helping them improve their productivity in a social and environmentally conscious manner.
