A wonderful coffee from Costa Rica!

After roasting a few profiles, I found the medium roast with this coffee added some wonderful dark cherry flavors along with a nice heavy body mouthfeel. We hope you enjoy this coffee as much as we do!

This Micro-lot* is from the producer Analynn Garro and produced at her Mata Acuna micro-mill, more information this below.

*Micro-Lot Coffees are small batches of the highest quality selections of coffee and often boast unique flavors and tasting notes. Micro-lots are grown from a specific and dedicated plot of land. The cherries are then harvested together and kept separate from other coffees growing on the same farm.

About the Producer

Analynn Garro

Analynn Garro began farming coffee in the 1990s. Most of the coffee cherries she produced were sold to large mills, which made controlling the final product close to impossible. Seven year ago, Analynn changed direction and built the Mata Acuna micro-mill on her property.

 

At Mata Acuna Analynn took control of coffee production and also became a steward of the environment. All water at the mill is recycled and reused to avoid contaminating rivers and creeks.

 

In this micro-lot, Caturra, Catuaí, Obata, and Hybrid H3 varietals were depulped and fully washed. After washing the coffee beans were laid out in a greenhouse to dry with regulated sunlight and wind. The coffee was then packed and stored in food-grade bags to delay aging in preparation for export.
